Salmon Teriyaki with Mango Sauce

Ingredients for Salmon:

  • 2-4 salmon fillets (skin or no skin)
  • 1/4 cup sesame oil
  • 1/4 cup plain rice vinegar
  • 1/4 cup low salt soy sauce
  • Dash of powdered ginger
  • Dash of pepper
  • Non-stick cooking spray
  • 1 box instant brown rice

Mix sesame oil, vinegar, soy sauce, ginger, and pepper in a bowl. Marinate the salmon for 30 minutes to an hour. Spray a skillet with non-stick cooking spray. Sear the salmon over medium to high heat. (If the salmon has skin, cook skin side down. When the skin bubbles, flip it over and remove the skin). Continue cooking until brown. Remove the salmon and place on a grill or in a 400 degree oven. Continue cooking approximately 10-12 minutes until the fish flakes. Serve with Mango Sauce (below).
