Angel Recipe: Cool Cucumber Dip

Cucumbers are plentiful in gardens, farmer’s markets, and grocery stores all across the country during the summer months. This fruit is packed with nutrients, vitamins, and fiber. Not only are they delicious and refreshing on a hot summer day, but they’re also rich in vitamins A, B, C and D. Cucumbers’ properties are thought to help fight cancer; the sterols in cucumbers helps reduce cholesterol. Cucumbers also help promote joint health and relieve arthritis pain. Because cucumbers are 95% water, they can help keep you hydrated. They’re a dieter’s dream with only about 25 calories in a medium-sized cucumber.


  • 16 oz. sour cream*
  • 16 oz. mayonnaise*
  • 3-4 cucumbers, peeled and diced
  • 1 tablespoon garlic
  • Salt
  • Pepper
  • Cayenne pepper
  • Dill

*For a lower-fat recipe, substitute with non-fat Greek yogurt


Add cucumbers to a food processor and pulse twice (or mash the cubes as fine as possible without a food processor). Add the sour cream, mayonnaise, and garlic. Season with salt, pepper, cayenne pepper, and dill to desired taste. Blend until smooth or until it reaches the desired texture. Pour ingredients into a boll and served chilled or at room temperature.
