Angel Recipes: Easy Breakfast Casserole

This recipe is perfect when you have company staying at your home, during holidays or other occasions for a special breakfast, or to serve at a potluck breakfast or brunch. Prepare the night before for a no-rush morning!

Easy Breakfast CasseroleIngredients:

  • 10 slices bread, torn into small pieces (can use stale bread; any variety)
  • 4 eggs
  • 1 package breakfast sausage, cooked and crumbled
  • 2 cups shredded cheese
  • 1/4 cup onion, chopped (optional)
  • 2-1/4 cups milk, 1/4 held back
  • 1 can cream of mushroom soup, low sodium

Directions:

  • Thoroughly cook breakfast sausage, drain and crumble
  • In a large bowl, combine bread, eggs, sausage, cheese, 2 cups of milk, and onion
  • Pour into a 13×9″ baking pan
  • Refrigerate mixture overnight
  • Mix together the soup and 1/4 cup of milk; spread mixture completely over the top of the chilled casserole
  • Bake at 325°F for 1 hour
