Angel Recipe: Grape & Walnut Chicken Salad

Chicken, walnuts and grapes are all healthy foods on their own. Red grapes are rich in the flavonoid resveratol, which helps prevent heart disease. Walnuts have protein, Vitamin E, and antioxidants. Chicken contains protein, niacin, selenium, and vitamin B6. Combined together, they are not only healthy, but are also delicious in this easy-breezy summer salad recipe.

  • 4 cups finely cubed cooked chicken (about 1.75 lbs.)
  • 1 cup chopped, toasted walnuts
  • 1 celery stalk, cut into very small pieces
  • 2 tablespoons finely chopped shallot
  • 2 cups seedless red grapes, cut in half
  • 3/4 cup low-fat mayonnaise
  • 3 tablespoons tarragon vinegar
  • 2 tablespoons fresh tarragon, finely chopped
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Directions:

Toss all ingredients together into a large bowl until combined. Makes 4-6 servings.
