May is National Salad MonthLayered Lettuce-Peas-Cheese Salad

  • 1 large head lettuce, broken into pieces, well-drained
  • 1/2 cup green pepper, diced
  • 1 package frozen peas, separated
  • 2 cups low fat mayonnaise
  • 4 ounces grated cheddar cheese
  • 1/2 cup celery
  • 1 medium onion, diced
  • 2 tablespoons sugar, sprinkled on top
  • 8 strips crisp bacon, broken into crumbles

Layer ingredients (except bacon), in order listed, into a 9×13 pan. Do not mix together. Cover and refrigerate overnight. Before serving, distribute the crumbled bacon over the top of the salad.
