Angel Recipes: Bok Choy Salad
Salad Ingredients:
- 1 medium head Bok Choy lettuce, chopped to bite size
- 1 bunch scallions, sliced to bite sizes, dried and chilled
- 1-1/2 ounce sesame seeds
- Garlic powder, dash
- 2 ounces of sliced almonds, 1 small package
- 2 packages Ramen noodles
Dressing Ingredients:
- 2 tablespoons soy sauce
- 1/4 cup vinegar, rice or cider
- 1/2 cup sugar
- 3/4 cup oil
Directions:
- Prepare lettuce and scallions and set aside in the refrigerator.
- Saute sliced almonds and Ramen noodles in oil with a dash of garlic powder. Add sesame seeds and mix well. Cool separately.
- For dressing, combine soy sauce, vinegar, sugar, and oil in a sauce pan. Bring to a boil for less than a minute. Cool separately.
- When ready to serve, toss lettuce/scallion mixture with noodles/sesame seeds/almonds mixture and dressing.
- All ingredients may be prepared ahead and stored separately. Simply mix together when ready to serve.
