Angel Recipes: Chicken Salad, Hawaiian Style
Keep summer going all year long with this Hawaiian-inspired chicken salad.
- 4 cups chicken, cooked and chopped
- 2 cups celery, diced
- 1 cup mayonnaise (or plain Greek yogurt)
- 1 20-oz. can pineapple chunks, drained
- 1 cup pecans, chopped
- 1 pound seedless grapes, halved
- 2 11-oz. cans mandarin oranges, drained
Directions:
Mix all ingredients, except oranges, in a large bowl. Gently fold in oranges to avoid crushing them. Serve over lettuce leaves, on bread, warm rolls, or croissants.
