Angel Recipes: Healthy Nut and Fruit Bars
March is National Peanut Month. Peanuts are so nutritious, as they’re high in B vitamins, Vitamin E, protein, and manganese. Try peanuts in this easy no-bake recipe:
Ingredients:
- 1 cup nuts, chopped
- 2 cups raisins or other dried fruit combination
- 2 cups oats, rolled or instant
- 2 cups cereal (non-sugary)
- 3/4 cup peanut butter
- 1/2 cup brown sugar, packed
- 1/2 cup honey
- 1 teaspoon vanilla extract
Instructions:
- Spray a 9×13″ pan with non-stick cooking spray
- Combine nuts, raisins, oats, and cereal into a large bowl
- In a large microwaveable bowl, combine honey, peanut butter, and brown sugar and heat on high 1-2 minutes until bubbles form; add vanilla and stir
- Combine nut mixture with peanut butter mixture; stir until coated
- Pour into pan and press ingredients tightly together
- Let sit 1 hour in refrigerator; cut into bars
