Angel Recipes: Hearty Lentil Soup

Perfect for a cold winter day, this delicious, nutritious, low-fat lentil soup will warm your bones!

Serves 8


  • 2 tablespoons olive oil
  • 2 large onions, cubed
  • 1 teaspoon garlic, minced
  • 3 carrots, diced
  • 2 stalks celery, diced
  • 3-1/2 cups tomatoes, crushed
  • 2 cups lentils, any variety (soak 4 hours, rinse and drain)
  • 1/2 teaspoon ground black pepper
  • 3/4 cup white wine (substitute stock for wine, if desired)
  • 2 bay leaves
  • 7 cups low-sodium chicken or vegetable stock
  • 1 sprig fresh parsley, chopped (dried parsley may be substituted)
  • 1/2 teaspoon paprika

Optional ingredients:

To the recipe above, add wild rice, barley, chopped ham, or turkey kielbasa


  • In a large pot, saute onions in oil until translucent
  • Stir in garlic, celery, paprika, and carrots
  • Saute 10 minutes
  • Stir in tomatoes, chicken or vegetable stock, lentils, bay leaves, and pepper
  • Stir well
  • Add wine and bring to a boil
  • Reduce heat slowly and cook 1 hour on low to medium heat, or until lentils are tender
  • Garnish with parsley and serve
