Angel Recipes: Hearty Lentil Soup
Perfect for a cold winter day, this delicious, nutritious, low-fat lentil soup will warm your bones!
Serves 8
- 2 tablespoons olive oil
- 2 large onions, cubed
- 1 teaspoon garlic, minced
- 3 carrots, diced
- 2 stalks celery, diced
- 3-1/2 cups tomatoes, crushed
- 2 cups lentils, any variety (soak 4 hours, rinse and drain)
- 1/2 teaspoon ground black pepper
- 3/4 cup white wine (substitute stock for wine, if desired)
- 2 bay leaves
- 7 cups low-sodium chicken or vegetable stock
- 1 sprig fresh parsley, chopped (dried parsley may be substituted)
- 1/2 teaspoon paprika
Optional ingredients:
To the recipe above, add wild rice, barley, chopped ham, or turkey kielbasa
Directions:
- In a large pot, saute onions in oil until translucent
- Stir in garlic, celery, paprika, and carrots
- Saute 10 minutes
- Stir in tomatoes, chicken or vegetable stock, lentils, bay leaves, and pepper
- Stir well
- Add wine and bring to a boil
- Reduce heat slowly and cook 1 hour on low to medium heat, or until lentils are tender
- Garnish with parsley and serve
