Angel Recipes: Mock Crab Salad


  • 3 boiled eggs
  • 1 (3.25 oz.) can tuna, packed in water
  • 3 tablespoons chopped pimiento
  • 1 tablespoons light mayonnaise
  • 1 teaspoon vinegar
  • 1/2 teaspoon salt
  • optional ingredients: chopped olives, onions, celery, and/or tomatoes


Finely chop eggs, stir in remaining ingredients until mixture is blended and evenly colored by pimiento. Makes 1.5 cups. Serve as a dip with crackers, as a spread on bread or flatbread, or as a salad on lettuce greens.
