Angel Recipes: Mock Crab Salad
Ingredients:
- 3 boiled eggs
- 1 (3.25 oz.) can tuna, packed in water
- 3 tablespoons chopped pimiento
- 1 tablespoons light mayonnaise
- 1 teaspoon vinegar
- 1/2 teaspoon salt
- optional ingredients: chopped olives, onions, celery, and/or tomatoes
Directions:
Finely chop eggs, stir in remaining ingredients until mixture is blended and evenly colored by pimiento. Makes 1.5 cups. Serve as a dip with crackers, as a spread on bread or flatbread, or as a salad on lettuce greens.
