Salmon and Linguine in Low-Fat Creamy Sauce



  • 3 tablespoon olive oil
  • 1 small onion, chopped
  • 2 tablespoons flour
  • 1 cup skim non-fat milk
  • Dash of pepper
  • 2 scallions, cut thinly


  • 7.5 oz. can salmon, drained
  • 2 tablespoons grated Parmesan cheese
  • 1/2 lb. linguine, cooked & drained according to directions (reserve 1/4 cup water); use whole wheat pasta for a healthier alternative
  • Freshly chopped dill, optional


Sauce: In a saucepan, saute onions in oil. Stir in flour. Mix well. Add milk and whisk continuously until it boils and thickens. Stir in pepper, scallions, and the reserved linguine water.

In a serving dish, add salmon pieces to linguini. Pour sauce over linguine and salmon and toss. Sprinkle with Parmesan cheese. Add fresh dill as an optional garnish.
