Strawberries are a delicious summer fruit. Combined with healthy spinach, this salad will be a favorite at your summer get-together!

Dressing Ingredients:

  • 1 lemon
  • 2 tablespoons white wine vinegar
  • 1/3 cup sugar
  • 1 tablespoon canola oil
  • 1 teaspoon poppy seeds

Salad Ingredients:

  • 1/4 cup sliced raw almonds, toasted
  • 1.5 cups strawberries, sliced
  • 1/2 medium cucumber, sliced and halved
  • 1/4 small red onion, sliced into wedges (approximately 1/4 cup)
  • 1 package (6 oz) fresh baby spinach


Dressing: Zest lemon to measure 1/2 teaspoon zest. Juice lemon to measure 2 tablespoons juice. Combine zest, juice, vinegar, sugar, oil, and poppy seeds. Cover and refrigerate until ready to use.

Salad: To toast almonds, preheat oven to 350°F. Spread almonds on baking pan and bake 10-12 minutes or until lightly toasted. Hull strawberries and slice. Score cucumber lengthwise, remove seeds, slice, and cut slices in half. Slice onion into thin wedges. Place spinach in large bowl. Add strawberries, cucumber, and onion. Pour dressing over salad, gently tossing to coat. Sprinkle with toasted almonds. Serve immediately.
