Angel Recipes: Summer Broccoli Salad
June is National Fruits and Vegetables Month. In honor of the healthy green vegetable, broccoli (rich in calcium and vitamins C and K), we’re featuring this delicious Summer Broccoli Salad, perfect for all your summer picnics and potlucks!
- 2 bunches of broccoli, cut into small pieces
- 1 cup low-fat mayonnaise
- 1/2 cup sugar
- 3 tablespoons white vinegar
- 1 small red onion, chopped
- 6 slices cooked bacon, very crisp, broken into small pieces
- 3/4 cup golden raisins
- 1/2 cup halved cherry tomatoes, optional
- 1/2 cup sunflower seeds, optional
- 1 cup grated cheddar cheese, optional
Directions:
Mix all ingredients in a bowl and marinate in the refrigerator for at least 3 hours. Enjoy!
