  • 1 1/4 lbs yellow squash, coarsely chopped
  • 1/2 cup sweet onion (Vidalia, Walla Walla), chopped
  • 1 sleeve saltine crackers, crushed
  • 2 large eggs
  • 3/4 tsp salt
  • 1/2 tsp sugar
  • 1/4 cup yellow cornmeal
  • 1 tbsp vegetable oil
  • Cooking spray


  • Steam squash and onion in a covered pan, approximately 15 minutes or until vegetables are tender. Drain well.
  • Mash squash mixture with fork or potato masher and stir in crushed crackers, eggs, salt, and sugar.
  • Cover and chill the mixture for 3 hours.
  • Place cornmeal into a large shallow dish.
  • Divide squash mixture into 12 equal portions.
  • Working quickly, dredge squash mixture, one portion at a time, in the cornmeal, shaping into 3 patties.
  • Coat each patty with cooking spray.
  • Coat a large nonstick skillet with cooking spray and add cooking oil.
  • Heat skillet over medium heat until hot.
  • Add 4 patties and cook 1 1/2 minutes on each side or until golden brown.
  • Keep warm until all patties are done; serve immediately.
