Angel Recipes: Tomato-Basil Bruschetta
April is National Florida Tomato Month. Tomatoes are a delicious part of a healthy diet. They’re rich in Vitamin A, C and folic acid. They also contain antioxidants lycopene, choline, beta-carotene, lutein, and alpha-lipoic acid. They’re also low in calories and are a staple ingredient in many recipes.
Angel Recipe: Tomato-Basil Bruschetta
Ingredients:
- 3-5 ripe tomatoes, diced
- 2 cups basil leaves, finely chopped
- 2 tablespoons extra virgin olive oil
- Salt and fresh ground pepper
- Garlic salt
- Cooking spray
- 1 large baguette, sliced 1/4″ thick
Directions:
Combine tomatoes and basil together. Drizzle oil over mixture. Season with salt and pepper. Cover and refrigerate at least 30 minutes. Preheat the oven to 400° F. Place bread slices on baking sheet and spray with cooking spray. Sprinkle with garlic salt and pepper to taste. Bake 10-15 minutes until lightly browned. Bread slices may be prepared ahead of time and stored in plastic bag. When ready to serve, place bread on serving platter and heap spoonfuls of tomato mixture on each slice. Enjoy!
