Angel Recipe: Baked Sweet Potatoes

The health benefits of sweet potatoes for seniors (and everyone, for that matter) are numerous. Nutritious and delicious, sweet potatoes are very high in vitamin A and vitamin C. They are also high in fiber, potassium, vitamin B6, and potassium. A medium sweet potato contains about 100 calories and is very low in saturated fat and contains no cholesterol. Their deep orange color points to high carotenoid counts. Carotenoids are antioxidants that help boost our immune system and help strengthen our eyesight. For those involved in elder care New Jersey and elsewhere, plan your menus with these tasty and nourishing root vegetables.

Baked Sweet Potato Recipe

Serves 6; Prep Time: 5 minutes; Total Time: 50 minutes

You Will Need:

  • 6  medium, unpeeled sweet potatoes
  • 6  Tablespoons unsalted butter
  • 1/2  teaspoon kosher salt
  • 1/8  teaspoon black pepper


  • Preheat oven to 400° F
  • On each sweet potato, pierce several times with a fork
  • Line a baking sheet with foil and place the sweet potatoes on the sheet
  • Bake until potatoes are tender, about 45 minutes
  • Place a slit in the top of each sweet potato
  • Top each sweet potato with 1 tablespoon of butter
  • Season with salt and pepper
