Cheesy Potato Bake

This recipe serves a crowd. Great to prepare in advance and cook the day of your dinner or breakfast.

Ingredients:

  • 2 pound bag frozen hash browns, thawed
  • 1 small onion, finely chopped
  • 1 cup cheddar cheese, grated
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 8-oz. sour cream
  • 1 can cream of chicken soup
  • 1/2 cup butter, melted

Directions: Preheat oven to 350°F. Mix all ingredients by hand. Place in a well-greased 3-quart casserole. Spread topping mixture (below) evenly covering entire top of potato mixture. If using a glass casserole dish, lower oven to 325°F. Bake for 40 minutes.

Topping Ingredients (mix together):

  • 1/4 cup butter, melted
  • 2 cups corn flakes, crumbled
