Visiting Angels Cranberry Chicken Salad Recipe
Cranberries are delicious and extremely nutritious. They’re super high in antioxidants–more than most other fruits and vegetables including broccoli, grapes, raspberries, spinach, and strawberries (only blueberries have more). They’re also rich in fiber and Vitamin C. Enjoy them all year-round plain and in dishes, such as the Cranberry Chicken Salad below.
Ingredients:
- 3 cups cooked boneless chicken breasts
- 1-1/2 cups dried celery
- 1-1/2 cups dried cranberries
- 1/2 cup chopped walnuts
- 1-1/2 cups light mayonnaise
Directions: Saute chicken in a small amount of oil until thoroughly cooked, approx. 10 minutes. Allow the chicken to cool, then chop into small pieces. Combine all ingredients in large bowl. Chill until ready to serve.
